About This Recipe

Undhiyu is the epitome of seasonal cooking from Surat, traditionally baked upside-down (Undhu) in earthen pots under fire pits in open fields. Packed with tender surti papdi, tender baby brinjals, purple yam (kand), sweet potatoes, and spiced fresh fenugreek dumplings (muthia).

This dish captures the earthy fragrance of the Gujarati winter harvest. Pair it hot with puffed puris and chilled Shrikhand for the ultimate royal feast.

CHEF's METHOD

Step-by-Step Cooking Instructions

1

Make the Crispy Methi Muthias

Combine chopped fenugreek leaves, gram flour, whole wheat flour, ginger-chili paste, sesame seeds, turmeric, sugar, and 1 tbsp oil. Knead into a firm dough without adding extra water (the methi releases moisture). Shape into small oval dumplings and deep fry on medium-low flame until crisp and golden brown. Drain and set aside.

Pro Tip: Frying on medium-low ensures the muthias cook all the way to the core.
2

Prepare the Aromatic Green Masala

In a large bowl, mix freshly grated coconut, minced green garlic, roasted peanut powder, coriander-cumin powder, sesame seeds, red chili powder, chopped cilantro, lemon juice, and salt. Rub everything together with your fingers to release the rich oils.

Pro Tip: This masala is the aromatic heartbeat of the dish.
3

Stuff the Vegetables

Slit baby brinjals and baby potatoes in a criss-cross pattern keeping the stems intact. Stuff a spoonful of the prepared green masala tightly into each vegetable. Reserve the remaining masala for the gravy.

Pro Tip: Be gentle so the baby vegetables don't snap.
4

Layer and Slow-Cook

Heat peanut oil in a heavy-bottomed handi or Dutch oven. Add ajwain and a pinch of asafoetida. Add the hard tubers (yam, sweet potatoes, baby potatoes) and papdi beans. Layer the stuffed brinjals on top, scatter remaining green masala and pour half a cup of warm water. Cover tightly and cook on low flame for 25 minutes.

Pro Tip: You can invert a plate with water on top of the pot lid for even steam circulation.
5

Finish with Muthias

Gently place the fried methi muthias on top of the vegetables during the final 10 minutes of cooking so they soften slightly while retaining their comforting structure. Garnish with fresh green garlic and serve steaming hot with puris.

Pro Tip: Undhiyu tastes even better the next morning as the spices marry.

Chef's Secret Notes & Storage Tips

Fry the methi muthias on gentle medium-low heat so they cook evenly all the way through without turning bitter. Use freshly grated coconut and abundant green garlic if in season.
